Mushroom and Halloumi Burger

Ingredients

  • 2 Aldi's Bakers Life Bread Rolls
  • 200 grams Lemnos Organic Halloumi
  • olive oil spray
  • 2 large field mushrooms
  • 1 tbsp salted butter
  • 1 tsp minced garlic
  • 1 fresh tomato
  • 1 handful spinach
  • 1/8 red onion
  • 2 tbsp tomato relish

Instructions

  • Pre-heat the oven to 200°C
  • Remove the inner stalk from the mushroom. Place them onto a lined baking tray with teh inside facing up
  • Melt down the butter and mix through minced garlic, then drizzle garlic butter over each mushroom
  • Place the mushrooms in the oven to roast for 15 minutes. Whilst they're cooking, prep everything else
  • Finely slice the tomato and red onion
  • Slice the two buns in half and spread the relish on the base of each bun
  • Slice the halloumi down the centre long ways to create two thin slices, then slice them in half again so you have four square pieces. Each burger will have two pieces in it.
  • Get a grill fry pan hot and lightly spray with olive oil spray. Then pan fry the halloumi for 2 minutes on each side until grilled, crunchy, and slightly soft and melted. Turn off the heat.
  • When the mushrooms are ready remove from the oven and place on the base of the bun on top of the relish. Then layer the halloumi, onion, tomato and spinach.
  • Close the bun and enjoy

Notes

With the protein coming from the Haloumi and the Aldi’s High Protein roll this meal is a LCHF- VHP meal with over 40 grams of protein per serve! Unheard of for a vegetarian meal.
